A Christmas Recipe for you

Here is a favourite raw recipe that both Northern and Southern readers should be able to make. My winter readers will have to make a creative replacement or two, but it will still be a stand-out result.

1.       Make a Cauliflower Risotto.
2.       Choose a pudding-sized large bowl and gently press mixture down to hold together.
3.       Place your choice of pretty presentation plate over the top and invert.
4.       Remove bowl carefully.
5.       Layer baby spinach or baby lettuce leaves around the molded Cauliflower Risotto.
6.       Sprinkle pomegranate jewels liberally around to resemble a wreath that encircles your Cauliflower. You can use baby tomatoes or cherries if you wish.
7.       Serve and enjoy the accolades.

Happy birthday to me!

Super Charge your Smoothie

Banana, milk or yoghurt, berries, protein powder. These seem to be the standard ingredients to a Smoothie. It seems a shame to waste a good smoothie opportunity without taking the chance to load it up with goodies to give your day a super-charge start.

So here are some of my suggestions: if you can't have bananas or don't like them, choose another creamy fruit such as mango, papaya or pawpaw. If you can, substitute pasteurised milk for raw milk, nut milk, oat or rice milk, fruit juice or even plain old water. Any of these is a step up from shop milk which is mucus forming and will hinder your efforts to add some nutritional 'wham' to your day.

What other fruits have you got languishing in your fruit bowl or veggie drawer?. Have you got some left over apple you froze when your Little Darling had had enough? A bag of frozen berries, pineapple? Great; mix and match your flavours to suit your mood. blueberries for a pretty purple, strawberries for a gorgeous pink. Coconut, and pineapple for a Tropical sensation. Mango on its own for a wonderful taste; pretend you're in Fiji!

Boost with super food powders; maca, mesquite, chia, ground flax seed, probiotic etc. Oil is good: coconut oil is easily incorporated as is flax seed oil such as Waihi Bush.

So many choices...

Your blender can be your personal Smoothie laboratory. Go forth and create!

Morning-after Smoothie
I am a bit of a tea-totaller so this doesn't come from personal experience. However, it sounds so nice I might have it anyway. For those of you who would be interested in trying it sometime, here it is:

2 bananas, chopped and frozen
3 c almond milk
2 shots espresso, cooled
ground cinnamon to garnish

Blend the bananas and enough milk to a thick smoothie consistency. On medium speed, gradually add the remainder of the milk, then the coffee. Pour into two tall glasses and sprinkle with cinnamon. Serves two.

The Easiest Weight Loss Trick in the World

Of all the weight loss ideas I have heard, this one really takes the cake. In a good way, I mean. And it could be literally, too.

Cake? Weight loss? Confused? Read on...

Listening to a panel of blokes discuss weight loss, one of them said he'd heard the simplest method yet, which pretty much guaranteed results. Here it is: you don't eat anything if you haven't made it yourself.

I've been mulling over this in my spare mental-availability-moments, and I think there's a lot to be said for it. Want pasta, ready made sauce, chippies, cake? Make it yourself.


Fancy a salad with a lovely mayonnaise? Fine; but only if you make the dressing yourself.

You can have a tea or coffee but not a hot chocolate - unless you make the mix.

Mince or steak is fine but sausages are not. Pasta is out, rice is in. Weetbix is a no-no but porridge, eggs or homemade muesli is a 'yes'. And bread, of course: tut, tut; but if you have a bread maker: easy.

I figure that this means folks would take an easier food route because all that DIY takes time. You could do some but not all. That means you'd choose something much simpler that happens to be close to it's original state. Such as fruit for dessert with cream or maybe yoghurt but only...you got it...only if you made the yoghurt yourself.

I reckon you could have a day off a week and have a take-away, meal out or a home-cooked one made with ready-made ingredients. If it all seems too much to plan (and it is a big shopping and eating change for all of us) then try baby-stepping your way into it. Make one meal per day a DIY for a few days and then add the others in as soon as you can.

I think it could be quite an exciting and interesting process. Your purse will be heavier and you will be lighter. The multinational corporations will see their stock fall and so will the Golden Arches, BK and KFC. No tears there.

I can see how making your own cake and eating it could be the icing on the top. Sorry, I couldn't help myself!

Healing Cancer Summit

I know many people, both family and friends who either have, have had (remission or cure) or know someone who has The Big 'C'. You have a list, too.

What does one do? For those affected there are decisions to make: conventional, alternative or a combination of both. It can be a frightening time for all concerned.

I have decided to promote the 2nd Annual Healing Cancer Summit (starts 31 October) because although I know I won't agree with all the opinions brought, I also know that there will be many that I do. Besides, I believe everyone has a right to be as informed as possible and make decisions based on what they feel is best for themselves and their loved ones.

I also know that you're all 'big girls and boys now' and know how to sift information or have others around you to help you do so.

Please understand that I have deep respect for modern medicine - I am not of the thinking that it has no place in our lives. Alternative medicine also has my deep respect. I am not a 'them and us' woman. What I do wish for is a better marriage between conventional and alternative options.

Knowledge is power. The 2nd Annual Healing Cancer Summit starts 31st October.

The Summit is free, there are options to buy the series after the Summit and no doubt other purchases will be offered to you. You're probably clever enough to figure how to tape if for free but many of you will want the 'real thing' and some of the other products. Remember that going to doctors, treatment and drugs cost money, too; sometimes a lot of money.

Protein Powders, Part One

These have become Big Business. I can only imagine the massive finances invested in marketing this ‘necessity’ to those wanting to boost their body mass.

Being the great label reader that I am, I investigated what wonderful ingredients make up this magic potion. One version contained Maltodextrin, Crystalline Fructose, Whey Protein Isolate and Natural & Artificial Flavouring. Another product wasn’t much more than brown rice powder flavoured with chocolate. So far nothing to justify the hefty price that goes with the goods.

Now stay with me here, people. What can you easily add to your everyday eating to increase your protein intake? Let’s take the humble smoothie, since I adore the way it can deliver a multitude of nutritional positives.

Obviously you’ll not want all of these in a smoothie – that would be slightly OTT but it’s good to know you have a selection to choose from. You can buy all of these foods in my webshop.

* Almonds – if nut milk is your liquid then 2 cups is approximately 16gm protein, if you keep the almond meal as part of your smoothie. Sieve it, and there will be less.
* Other nuts
* Flaxseeds – (ground)
* Chia seeds
* Sesame seeds
* Mesquite Powder
* Cacao Powder (now you’re talking!)
* Bee Pollen
* Maca
* Spirulina
* InLiven (probiotics) – the list could be longer, but you get the idea.



Now take note: all of the above deliver waaayyy more than protein. You get omegas, minerals, vitamins, fibre, natural sugars and more. See where I’m going with this? Neither do you have to put your kidneys and liver through the hassle of sifting the artificial ‘whatevers’ that are in the supposed health food.

It is possible to do kidney and liver damage by ingesting too much protein so taking Protein Powders should be done under professional supervision. I don’t think any amount of Pop Eye muscles are worth the risk of major organ damage. Neither the liver nor kidneys is particularly easy to replace.

Don’t let the fancy labels on protein powders intimidate you into believing that you need them!

The Herald and I

Last week I got a mention in our national newspaper, the New Zealand Herald. The Life and Style Editor had interviewed me and trialled some of my Seven Day Program. This article is her on-going 'take' on raw food.

Please have a read for yourself and tell me what you think. How does the article agree or disagree with your perception on eating fresh and raw food?

I would've liked the article to say, it doesn't matter how much raw you are eating, just start with something. I would've liked the readers to see that one doesn't have to eat 100% raw to enjoy improved health. And I especially would've liked to communicate that including more raw doesn't mean you can't eat meat or other animals products if you still want to, enjoy a wine or share a pot of tea with a friend.

But I am not a journalist and one must take what the interviewer chooses to present in her column. One day I want a column to write and there I will explain carefully the many shades of 'green' aka many ways to apply raw, fresh food in your life.

In the meantime, those of you who've been reading my musings for some time know well that I espouse all of those things and above all, encourage that where ever one can - start eating more raw food.

Juicing – Part Three

Health Benefits -This winter I’ve done a lot of juicing and my family have avoided cold and flu viruses. That has made the outlay worth it – no lost time in sickness, the expense of tissues and the general misery a cold or flu brings with it. Our 16 year old son started to have lots of juice after two colds, one after the other, early in the season. He’s a juice convert, now. Salad in a glass, he calls it.

Pulp Waste - Recently a friend said that because of the pulp waste of juicing, she was cutting back. I’ve been thinking about this, and whilst it does seem wasteful, it’s pretty much the just the fibre left behind. Most of the ‘goodness’ is now in the juice. If you have a compost or worm farm then officially, it’s not a waste – circle of life and all that.

I’ve found a recipe that uses carrot pulp to make a raw carrot cake. I’ve not tried it yet but I’m keen.

Health Risks - Remember that you’re drinking a lot of sugar if it’s mainly fruit you’re juicing. Whilst that isn’t particularly an issue if you don’t have health issues, it can be a consideration if you do have ‘something going on.’ Obviously, diabetes is one. Another would be certain types of cancer and candida. You need to have a chat to your doctor if you’re implemented changes in your diet, even if the changes are good ones.

Macadamias and Juicing – Part Two

Really Raw Macadamia Nuts – I am delighted to tell you I have sourced New Zealand grown, excellent quality (restaurant grade) and they are really and truly raw. At no time in their production have they been heated above 45C. They are $73.75/kg. They come in 500g, 1, 3 and 5kg. Email me- they’re so new they’re not even in my shop yet.

Juicing – Part Two
Recipes - Beetroot, apples and ginger, with or without lemon or lime, is lovely. I don’t like the earthy taste of beetroot so the ginger or citrus covers it nicely as well as adding to the nutrition of the juice. The colour is a wonderful ruby.

Greens, apples, mint and lime (or lemon) is delicious, too. You can include some of the lemon and lime skin but make sure it is spray free and unwaxed. Orange and grapefruit skins are too strong and bitter.

Once you know what combinations work for you, just juice what you have and enjoy. Remember not to confuse the palate with too many flavours. If it’s a bit too strong for you, then sweeten it up with another apple, carrot or whatever is around.

Sparkling water added is a nice treat; otherwise add a bit of water, if it’s too strong for you.

Organic or not organic – if you can use organic or spray free, then that is a good idea. Considering the amount of fresh produce you can put through a juicer, it can be potentially a lot of residual pesticide. That’s worth a thought, anyway.

However, if I had to choose between conventional produce and not having a juice at all, then I’d go for conventionally grown produce.

Buying a juicer – I have a Green Star. I love it for the efficient way it produces juice and leaves behind a dry pulp. To clean it takes 4 ½ minutes. I can juice a lot and keep in the fridge for two to three days before it oxidises. It does not heat the juice and destroy enzymes. For me the price was worth the paying; a serious juicer for a serious ‘juicee’. See more here.

If you’re not sure if juicing is for you long term or your finances direct you to a much cheaper model, then I totally understand that. Upgrades can come later.

I know of someone who used to grate carrot and squeeze it through a tea towel until she could buy a juicer.

Feel Inside (and stuff like that)

Juicing Part Two is supposed to be the post for today but it got bumped. That's because something lovely happened that I had to show you.

Flight of the Conchords have released a song for charity. It has to be one of the most endearing music videos I've watched. You have to watch the prelude of them interviewing the children to get the full benefit of the content.

Children are so simple and honest. Some of the things they say blow you away. These will make you laugh; they might even bring a tear to your eye.

The children said sick kids need juice, ice cream and pizza. So here's my contribution; changing the ingredients but keep the items on the menu.

Juice: skip the supermarket stuff, if you can. If not, buy juice that has no sugar or preservatives added. Preferably make your own juice. The simplest is to squeeze your own citrus - at the moment citrus trees are dripping with lemons, oranges and grapefruit. If you don't have any, gather up some courage and ask a neighbour who lets theirs drop on the ground and rot.

If the juice is too tart (and grapefruit can make your mouth pucker), stir in a bit of honey. Children are used to over-sweet juice so help them out a bit and make it palatable. If they don't like the 'bits' in it, strain it. You don't want a fight; you want them to drink it.

If you've got a juicer - great! Juice apples, add a green or two and call it Superman Juice, Kermit, Pretty Princess...whatever it takes to make them want it. You can juice a wee bit of beetroot to make a fabulous pink; just a little bit and some apple to cover the earthy taste and you've got a winner. Call it Rubies for the girls and Pirate Blood for the boys.

Add sparkling water if you want 'fizzy' - lemonade kind of defeats the purpose.

Ice Cream: buy very ripe bananas or wait until the yellow has some brown bits on the skin (this makes them sweeter). Peel, chop into four or five pieces and freeze. Vanilla - whizz frozen chunks of banana with 1 teaspoon of vanilla essence, 1 teaspoon honey and a wee bit of milk, yoghurt or water to make an ice cream consistency. Eat. That's it. Super easy.

Chocolate: add 1 or 2 tablespoons of cocoa. Add a few drops of peppermint essence for ChocoMint. Lemon & Coconut: zest and juice of one lemon, and a small handful of coconut. Ditto for Orange  or  Lime.  Stir through any choice of fruit for Fruity Ice Cream.  And don't forget Chocolate Chips!

Pizza: there is such a thing a raw pizza but that's for another day - it's not a quick meal to make. So make it a homemade pizza with as many toppings made from scratch as you can. This way you will avoid preservatives etc often in bought jars and packets.

Serve with whatever salad items your child likes. Match with your beautiful juice, give them raw ice cream for dessert and you've just made one heck of a healthy meal for your darling children, whether they're sick or not.

Juicing – Part One

Today we went to the Coatesville Market; it seemed like a nice way to celebrate Father’s Day. Whilst most of my family enjoyed fancy sausages, I went off to find the Juice and Smoothie Van I spied as we found our car park.

What to choose? Detox, Liver Booster, Flu Chaser or Tropical? Ah… Lime: my favourite flavour (close competition with chocolate). The huge platter of carrots, apples, pineapples, lemons looked wonderful and the choices of the customers in front of me whizzed through the wonder-juicer.

My turn and Mr Juice Man mentions that the lime is flavour not a lime. Making sure, I asked whether it was real or artificial. Actually, I thought I was asking a silly question. No, it was artificial – milk shake flavouring. Egads! No thanks, can I have a lemon instead, please? Sweet man. Not a problem. Whizz, bang, done. Yum.


Milk shake flavouring, indeed! I don’t think he quite ‘got’ why people like me choose juice in the first place.

Juice has been on my mind a bit lately. I’ve had questions coming my way that have made me stop and think about what and why I juice.

Juicing fruit and vegetables removes the fibre, making it easy for your body to digest the juice quickly and be easily assimilated. Nutrition is fast tracked so it’s an efficient way to hugely increase your intake of vitamins and minerals.

What to buy – choose a range of seasonal fruit and vegetables. My choices have been juicing apples and carrots (cheaper than ‘firsts’), beetroot, spinach, chard, parsley, silver beet, ginger, limes and lemons. Obviously, not all at once but a combination of three or four is a good guide.

Don’t forget what you may have in your garden – parsley, mint, chickweed, too. (Make sure you know it’s chickweed, which is slightly stretchy if you pull it.)

If you have a juicer it’s fairly straight forward. Choose your vegetables and fruit, wash, chop to suit your juicer and you’re in business.

Coconut Oil

This oil has been in the news a bit lately.

The ‘official’ dietary advice says it is bad because it is a saturated fat. The tide seems to be turning but it has a long way to go out yet. The Alternative Crowd have long said it was a good oil to use and got slammed for it. They got on and kept using it, ignoring the current opinion. Good for them; looks like they were right.

In our house it goes in Smoothies. In a Chocolate Smoothie it tastes like a certain chocolate bar – the chocolate/coconut one (wink). In other Smoothies I hardly notice it; the family don’t comment so the taste ratio must be right.

I use it as a moisturiser, make-up remover and mild dermatitis-helper. It is a very cheap and totally safe alternative to KY Jelly.

Secrets like this need to be told because they will save you mega-bucks and don’t have potential side-effects. The Big Companies don’t want you to know this because you will stop buying their stuff and they will become Little And Insignificant Companies instead.

There is so much more to learn, as this following list indicates. I have tried a few but I will be kept busy trying out a few more for some time to come.

Real Food versus Processed Food

Of Guinea Pigs and People

Poor Bingley, the geriatric guinea pig, was suffering from chapped guinea pig lips. I suppose they're called lips. It didn't seem to be affecting his ability to eat too much as he was still one fat guinea pig. However, we'd tried the home remedy of Manuka Oil but it needed something more than Level One attention. Off to the vet we went.

It turned out his teeth were about 2/3rds longer than what should be and he couldn't close his mouth properly. The vet got out his snippers and corrected the length of his incisors somewhat. Nary a squeak from the cooperative piggy. (I wish a visit to my dentist could go as painlessly).

What followed was an interesting discussion on the merits of pellets for guineas and rabbits. It turns out there are few merits; only good for putting on weight, it seems.

The pellets are too rich for them and they will become unhealthy and sick. They will do much better on fresh grass, straw, veggies and fruit. Just the day before I contemplated buying pellets for Bingley but decided against it. My reason wasn't about food value but for economics. Simply put, I was too mean to buy them. Why spend the dollars when there is grass to be picked, puha to be plucked and the odd reject fruit and veggie to give him? (He likes a bit of bread, too.)

The interesting thing was my perception that processed foods, the pellets, were better because nutritionally, they were precisely made. Sigh. Not so. I had once again fallen for the powerful marketing machine.

I reflected how the same thing applies to us. We spend large amounts of money on processed food, fast food, packets, powders and fancy drinks. All along the superior food was not too far away but often passed over in favour of the factory version. How many times have I bought a 'treat' for my children (or myself :-)) when it was better value for money and better for our health to buy The Real Thing? Fresh fruits, especially sweet with their natural sugars, perfectly designed for our enjoyment.

It really is a mind game, isn't it? We have to retrain the way we think - yes, even those of us who've been at this for a long time are still caught out when choosing food.

Just like the guinea pig, if we buy mostly processed food we will have increasing poor health. Unlike the guinea pig it might take longer for us to recognise the symptoms; or have we become so immune to the symptoms we think they're a normal part of modern life? Dull hair, brittle nails, disease, weight and skin problems. All hassles Bingley would be suffering if he was on pellets.

Funny how the advice given by the vet should be the advice given to people, too.

Probiotics and Candida

Soon after I started work, all those years ago, I developed adult acne. For the next 25 years I struggled with it, spending a lot of money, using both conventional and alternative routes.

Seven years ago I started to use Miessence Organic Body Care and part of their Health range is InLiven - a potent probiotic. It seemed to be my miracle cure. Whatever the internal body details were, I don't know but for the first time in 25 years my skin started to clear up.

I do know that probiotics go to work first in your gut. This is the centre and most important area of your health. Without a healthy gut you cannot properly absorb the nutrition from your food. Rules for Raw Food (Part Two) and Donna Gates

Okay. They’re not really ‘rules’ but they are very helpful guidelines. The more you practice the better  (and healthier) you get.

Part Two
11. Invest in top quality appliances. Blender, dehydrator, juicer etc
12. Learn new things (recipes, ideas) regularly.
13. Find people who think like you do.
14. A raw food lifestyle is under your control. Don't let it control you. Freedom not entrapment.
15. Keep up healthy fats, but not too much. It is dangerous to avoid fats long term.
16. Be prepared to change things if the ratio of raw is not suiting you. It is not the same for everyone.
17. Don't allow anyone to 'should' you. What is right for them may not be for you.
18. You are responsible for your health; no one else.
19. Buy the best food you can afford; organic if possible.
20. Be content that you are doing the best you can with what you have, for now. Improvement can come naturally.

Actually, these are not exclusive to eating high raw. You’ll find most of them in any health list.

Each of these would take a chapter in a book or essay to pontificate about and explain. Maybe I will.

4. Keep learning as much as you can about raw food and health.

Walk On; U2 and Suu Kyi (and You)


Today’s post has nothing to do with Raw Food.  It has to do with life; specifically when life is hard.

This week I watched Suu Kyi from Burma/Myanmar with Bono. He said he was ‘star struck’ and ‘lost for words’. As an avid fan of U2 I can tell you this doesn’t happen often.

I was reminded of the song U2 wrote for her some years back, Walk On. It is a personal favourite and I have used it both in Stress & Burn Out workshops as well as for my own encouragement.

If your life is tough at the moment, this is for you.

If you feel like giving up, leaving and need to know that you’re not the only one, this is for you.

Suu Kyi has persevered under circumstances you and I would crumble under. She has held to a truth which was honourable and just, true and right.

Please accept this as an encouragement from me to you. Walk on.

Making and Using Coconut or Water Kefir

Candida is a common occurrence amongst women, men and children; even babies. Why this is will be the subject of another blog, suffice to say Kefir as a probiotic, can be of help. 

Those if you who are familiar with Donna Gates and The Ecology Diet will know this.

Kefir is fast becoming a new buzz drink. I should say ‘fizzy’ drink (as we call soda in New Zealand) as it has a light but discernible, fizz.
 
Recently I’m hearing how Big Brother wants to intervene (again) in our lives and give one more job to the Nanny State Boffins: restricting access to or finding ways to ‘encourage’ drinkers to drink less fizz/soda.
Apparently this is going to help the obesity epidemic.


Yep, I can really see the soda companies liking that. Oh, wait. They’ve probably got their version of Kefir in the lab already. Have to supply the up and coming gap, won’t they?
Well, they can’t patent Kefir grains.

Kefir is a fermented drink along the lines of yoghurt, sauerkraut, kimchee, sour dough bread and a cousin of anything else that ferments including the most common one of all, alcohol.
Kefir is genuinely good for you, as it is a probiotic and will gently but surely aid your gut in the ratio of bad v good bacteria.
 
How to get Kefir: the first and easiest is to buy it (thank you, Captain Obvious).  If you’re in New Zealand you can go straight to www.thekefircompany.co.nz and tell them I sent you.  Anita and her husband Terry make coconut Kefir by hand every Friday.
You could make it yourself but you have to be a really, really committed DIY Freak to do this. It is quite a mission to source a regular supply of drinking coconuts and get the ‘blimmin’ things open. If you like an adventure and the idea of filling your rubbish bin with semi-successfully opened coconuts, or even the unopened ones you gave up on, then go right ahead. Trust me. It’s much easier to get Anita’s. She delivers anywhere in New Zealand.
Water Kefir, on the other hand is quite easy; fiddly but easy. First, get yourself some water Kefir grains and follow the instructions that come with them. In New Zealand try www.waterkefir.co.nz.  For overseas readers, use your search engine to find a more local supplier or ask my kiwi friend to send you hers. She also supplied me with Caspian Sea Yoghurt Starter that I make with raw milk. I am enjoying this on my muesli each morning. It’s lovely over a bowl of chopped fruit, too.



The grains increase in number each time you make Kefir. At the moment I have three jars brewing on my kitchen bench top. There is a jar of ‘extras’ in the fridge at the moment, in sugar water waiting to find a new home or another jar on my ‘bench/counter.
I am using Kefir water in my Smoothies (a lovely tingle in the ‘background’) and in the juice I get with our Green Star. The children and DH are enjoying the fizzy effect. Honestly, who would’ve thought you could make a healthy fizzy drink?? Yay!!!
 
You can drink it straight. Drunk neat it reminds me of weak ginger beer. Add some ginger juice from the Juicer and hey presto, Ginger Beer!  Well, kind of.
 
You can also buy kefir powder from some health shops but these do not last indefinitely as the grains do. You will get between four and ten re-ferments before it becomes too weak to use again.

One Direction

Something I can take for granted with you all, Dear Readers, we are all going in One Direction. Not the darling boy band (although some of us are hauled along with our sons and/or daughters), but that One Direction in the pursuit of better health. We might stagger and fall but we stand up, dust off and start moving again. Perhaps we veer off into a side bay for a while to regroup, nevertheless there is reassurance that even if our paths look a little different we are all in this together and can encourage each other.

I love reading about home-grown companies that are often born of a necessity to find solutions to health issues. I'd like to take a few lines in upcoming blogs to tell you of some of them. Some of these companies supply our webshop. Once we've found product we love, we like to share them with you.

This weeks focus is on Waihi Bush Oils. I discovered this company when I was looking for a replacement for fish oil. I wanted to avoid the possibility of heavy metal accumulation. Grow More Raw

Growing some of your food is not just for the Budget Conscious. Whilst that is the deciding factor for some, for others it is a quest for ultimate freshness, a passion for gardening, a certainty of growing conditions or a satisfying hobby. Any combination may apply to you.

A good, basic place to start (even if you don't yet know if you have green fingers) is the humble sprout. These little power houses of energy are a very frugal main-stay of a raw menu, so it seems a 'know-how' will be of interest to a few of my Dear Readers. Here is my five-step plan for DIY* sprouts.


#1 Choose your sprout. Which one(s) do you like? Notice I said "which one(s) do you like" not what you think you should sprout. If you don't like it, then don't sprout it.

Please note: there are some seeds you must never sprout because of natural toxins. You can sprout green peas, chick peas (garbanzo), mung and adjuki beans but these are the only exceptions to the legume family. Grow the other legumes in your garden and enjoy their fruits but don't eat sprouted beans.

If you are a beginner and feeling unsure, check out the sprouted selection in the chilled produce area of your supermarket. Let that be your guide to help you choose until you are ready for other varieties.

#2 Buy your seeds. I realise that's a Captain Obvious statement, after all, you wouldn't steal them, would you? What I mean here is, be aware of what you buy. If you're buying from the bulk bins at your supermarket, be sure that they are not heat-treated (pasteurised). My local supermarket has these stickers plastered over the bins of seeds and nuts. Someone or somebodies must've complained loud and long enough for this to become practice. Bless them.

Heat-treated seeds will not grow. There is no life in them. Sow a field with pasteurised grain and there will be no harvest. I will leave you to ponder pasteurisation of other food stuffs and how this applies to you. Information is power but I'm not going there today.

Do not buy seeds intended for the garden. Often they have been treated with chemicals not intended for human consumption. You may buy garden seeds that have been organically raised. Check your packet carefully.

Seeds from a health shop should be good for sprouting but not necessarily so. Once I bought some red quinoa for sprouting but all I got was slimy and stinky glup. They were heat treated and only good for cooking (although their nutritional content would be compromised as heat denatures more than enzymes).

#3 Measure out a small quantity for sprouting, bearing in mind that seeds will double, sometimes triple in bulk, You don't want them taking over the kitchen. Pick over carefully to remove damaged and less-than-optimum looking seeds. Keep a look out for small stones; dentists are expensive. Rinse well.

#4 Sprout your seeds. Yay! The miracle starts.(See below for details instructions.) You can buy yourself a fancy-pants sprouting gadget or just use bowls, jars and sieves. My daughter loves her gadget and I am happy with my basic kitchen equipment.

#5  Eat your sprouts. You could call it enjoying your harvest! Fat of the land (kitchen). It's a good feeling to know that you are supplying real food all by yourself. Actually, I should be more humble: all I did was create the right conditions and nature did the rest. But I kind of like taking the credit.

The simpliest way to eat sprouts is to sprinkle a little or a lot on top of your salad or over your cooked food.

You can create a Protein Power Salad, a sprouted (and then dehydrated) muesli/granola or any amount of recipes for sprouted seeds, grains and nuts.

Sprouts are an easy and convenient fresh food. Whether in dry storage, sprouting on your kitchen bench or sprouted in your fridge they don't take up much room. They are rich in water, protein, amino acids, good fats (and so much more) all packed into a very small food package - amazing, really.

A note about lentils - choose green or brown. The orange lentils have been processed and are intended for cooking; they will not sprout.

Sprouting 

- Soak small amount of seeds or grains in filtered water; overnight is good, especially for the larger ones otherwise a few hours is fine.
 - Rinse a couple of times, drain. You want them damp but not sitting in water.
 - Cover and keep on bench; colanders and sieves over bowl are good for this. Rinse morning and night - might need more over summer. Small seeds need a couple of days to grow ‘tails’ larger ones like chick peas and udzuki a day or so longer.
 - When grown how you like them, keep in fridge to slow growth. Don’t forget to rinse daily. Use in 3 - 4 days.
- Choose sprouting seeds from sources that are not heat-treated (pasteurisation kills enzymes) otherwise they will not sprout but rot instead L nb - soaking but no tails (yet) is still considered a ‘sprout’, that is, the enzymes have been activated.
